Oven roasted Mahi filets marinated in fresh garden herbs, olive oil, lemon juice and garlic and topped with Old Bay Seasoning.
Thaw mahi filets, if frozen.
Combine olive oil, lemon juice, fresh herbs and garlic in a large Ziplock bag and add mahi filets. Seal bag and move filets around in the marinade to make sure they're coated. Place in refrigerator 1-3 hours until ready to cook.
Preheat oven to 425 degrees. Sprinkle mahi filets with Old Bay Seasoning and place in a baking dish. Bake for 10-12 minutes or until fish is flaky and cooked through.
Garnish with fresh parsley and a lemon slice if desired.
